Turmeric Chickpea Curry

  • 250g dried chickpeas, soaked overnight
  • 400ml coconut milk
  • 400g diced tomatoes
  • 1 large onion
  • 3 cloves garlic
  • 1-inch piece of ginger
  • 2 teaspoons ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cinnamon
  • 100g fresh spinach leaves
  • Handful of fresh cilantro, chopped
  • Cooked brown rice, to serve


  • Drain the soaked chickpeas and rinse them under cold water. Place them in a large pot and cover with fresh water. Bring to a boil, then reduce the heat and simmer for about 1 hour or until tender. Drain and set aside.
  • In a separate large saucepan, heat some oil over medium heat. Add the chopped onion and cook until softened for about 5 minutes. Add the minced garlic and grated ginger, and cook for another 2 minutes.
  • Stir in the ground turmeric, ground cumin, ground coriander, and ground cinnamon, and cook for 1 minute until fragrant.
  • Add the diced tomatoes and coconut milk to the saucepan, stirring well to combine. Bring to a simmer.
  • Add the cooked chickpeas to the saucepan and simmer for 10-15 minutes, allowing the flavours to meld together and the sauce to thicken slightly.
  • Stir in the fresh spinach leaves and chopped cilantro, and cook until the spinach wilts.
  • Serve the turmeric chickpea curry hot over cooked brown rice. Enjoy!
