Skin Glowing Salad

Crunchy, hydrating, and full of colour, this Skin Glowing Salad is one of those recipes that looks simple, but works hard in the background. Cucumber and carrot bring water content and gentle sweetness, while avocado adds healthy fats to help absorb fat-soluble nutrients like vitamin A. Tossed with herbs, seeds, and a lemony dressing, it’s refreshing without being fussy. You can keep it light or build it out: add chickpeas for protein, crumble in some feta. It’s designed to nourish, not overwhelm, and pairs especially well with long afternoons and bright daylight.


Ingredients (Serves 2)

  • 1 large cucumber, thinly sliced or shaved

  • 1 medium carrot, peeled into ribbons or finely julienned

  • ½ avocado, cubed

  • 1 small handful fresh mint leaves, torn

  • 1 small handful fresh parsley, chopped

  • 1 tablespoon pumpkin seeds (pepitas), lightly toasted

  • 1 tablespoon hemp seeds

  • Zest of ½ lemon

  • Juice of 1 lemon

  • 1 tablespoon extra virgin olive oil

  • ½ teaspoon honey (optional)

  • Pinch of sea salt

  • Freshly cracked black pepper

Optional add-ins:

  • Crumbled feta, grilled tofu, or chickpeas for protein 

  • Sliced radish or fennel for more bite

Method:

  1. In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper. 

  2. In a large mixing bowl, combine the cucumber, carrot, avocado, mint, and parsley.

  3. Drizzle the dressing over the salad and toss gently to coat.

  4. Top with pumpkin seeds, hemp seeds, and lemon zest just before serving.
