Protein-Rich Chocolate Pancakes

Protein-rich chocolate pancakes are the perfect post-workout meal to satisfy your sweet tooth while keeping things healthy. Ingredients:

  • 1/2 cup cottage cheese (or Greek yogurt for a smoother texture)

  • 2 large eggs

  • 1/3 cup rolled oats (blended into flour or used whole)

  • 2 tablespoons unsweetened cocoa powder

  • 1/2 teaspoon baking powder

  • 1 tablespoon honey or maple syrup (optional)

  • 1/4 teaspoon vanilla extract

  • Pinch of salt

Method:

  1. In a blender or food processor, combine the cottage cheese, eggs, oats, cocoa powder, baking powder, honey (if using), vanilla extract, and salt. Blend until the mixture is smooth and thick.

  2. Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a small amount of butter.

  3. Pour the batter onto the skillet, about 1/4 cup per pancake. Cook for 2-3 minutes on one side, until bubbles form on the surface, then flip and cook for another 1-2 minutes until fully set.

  4. Stack the pancakes on a plate and top with fresh berries, a dollop of Greek yogurt, or a drizzle of almond butter. For an extra treat, add a sprinkle of dark chocolate chips or a light dusting of cocoa powder.
